Hello! I love cooking and grilling but just got into the whole smoke scene... I love smoked fish so I started to look at various smokers, etc... I was at the store the other day and saw the ECB, not knowing it is a little monster after some mods, and picked one up, cheap. Yesterday, I read the manual and did the whole "seasoning" of the smoker thing... I have been trolling these forums to learn all the tips and will definitely heed all the advice I can. I think the first thing I will try is a 3-4 lb chicken and some ribs. Eventually I want to smoke all sorts of fish, primarily salmon and mackerel. Anyway, I'm glad I stumbled upon these forums!
