Newbie from NJ

  1. Hi All,

    I have been using a smoker box on my Weber Summit 620 grill for a few years now and what a pain it has been. Yesterday I decided to take the plunge into getting a dedicated smoker, the MES 30" 2012 model. The unit should be here in a week or so and I am so looking forward to smoking lots of things for memorial day weekend. I hope to be a frequent contributor to the site but not sure if I can really add anything beyond, "WOW that was good" because of all the great information already contained here.

    Welcome to the SMF Family...Please add where you are to your profile, makes it easier to help you. You are going to love the MES. I would suggest you take the Free 5 Day eCourse and get yourself a good Digital probe Thermometer. The one that comes with the MES is pretty good but many users have seen variances from 5 to 20 degrees. Many of us use the Maverick 732 Dual Probe therm. It has a remote and one probe for Smoker temp and a second for Meat temp. The MES will generate smoke starting at around 180*F or higher but will require additional chips every 30-40 minutes. A great accessory is the A-MAZE-N Products AMNPS pellet smoke generator. This generator is inexpensive and having been designed with the MES in mind, will generate flavorful smoke at any temp between 0 and 300*F and will allow you to make smoke at the sub 100*F temps used for Cheese and Bacon. The MES can't do these on it's own. It will let you smoke for any amount of time up to 10+ hours without having to reload. This comes in real handy on those long Pork Butt and Beef Brisket Smokes.
