Hi, 

My wife and I are living in New Orleans, in the heart of the French Quarter. Great place to be, great restaurants, music, always something going on. What's really great is you can walk most anywhere. We live in a condo, in a building that was constructed in 1827. We spend a fair amount of time on maintenance, as it takes some work to keep these old buildings in good shape. We had roof damage from Isaac, and the repairs, on the authentic slate roof took four months. We had to order slate from Vermont for the repairs! 

I'm interested in the site and forum to learn more about different ways to smoke. In the French Quarter you can't have a BBQ or Smoker on a balcony due to fire safety. We live on the third floor of our building, so no way to smoke or grill outside. I've been researching different ways to grill and smoke inside, and would enjoy hearing about any suggested methods, equipment etc. that would aid us in becoming proficient in smoking inside.

Had relatives that lived on Royal Street..just up from Jackson Sq. Then they moved to St. Phillip Street!

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

HI Mike, and welcome aboard!  These forums are a great place for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  When in doubt, just ask and someone here will have the answer.  I'm sorry to hear you can't use a smoker outside your condo...that's a bummer!  To do any smoking inside, you'd have to figure out a way to vent the smoke...if you could could get past that, I'd think you could "southern engineer" something.  You'd need a heat source and a smoke generator.
