Smoking is next on my bucket list. {3 yr cancer survivor}. First was an outdoor  kitchen, {and an outhouse, wifes request} not a carpenter or a mason but still came out pretty decent. In the process of converting a frige into a smoker, electric PID control and a bradley smoker, trying to make as automated as possible! Learning a lot here Thanks to all who post.
