We just bought a Char Broil vertical electric smoker and have found when we didn't know what we were doing, things came out the best! Dumb luck!  We (my husband and I) are usually weber charcoal people, but wanted the convenience of an electric smoker .

My main issue is getting the wood chips to smoke without being smothered with the dripping fat. I must be overloading it--we did 4 small chickens this weekend.

Looking forward to learning from the pros!

Welcome from a fellow Missourian. Try to limit the amount of time you spend here. It's addictive!
