Went to Lowe's to buy a gas fireplace and freezer ended up with a Master Forge 2 door smoker. As of yesterday a half of beef and a whole hog occupy my freezer. Now everyone I want to learn how to smoke my bounty.
 
Welcome Turtlelife. You have come to the right place. Don't be afraid to ask any questions on here - no matter how basic you think they may be. We have all had to learn at some point and have probably also asked the exact same questions.

You will get a lot of good advice from people on here. Remember though that there is no "right" way to smoke and many on here will have developed tweaks to the more well established methods that give them good results. Ask away and read all of the responses. From them you will be able to get a feel for which method is likely to work best for you and your particular equipment.

As a starter though, if you haven't already done so, also invest a good digital thermometer (Maverick ET-732/733 or similar). Temperature is one of the critical things to control when smoking.

Sounds like my family. No just been a turtle freak since I was little even turtle tattoo covering my back. So Kentucky boys where you from? How the heck do I smoke pork tenderloin sliced. Had I know I was buying a smoker I would have left it whole.
