Hello Everyone! Name is John, live in a town outside of Kansas City, MO. I have been larking the forums for a few weeks and decided to finally join. I have been smoking meat in my Char-griller Super Pro and decided to step up to the next level. Recently purchased a MES 30 from lowes since they were on sale.Going to smoke with a MES for a little bit then start using a charcoal smoker once I have a handle of things. I am going to be smoking a whole chicken and some ribs saturday which i prepared this morning. Got my chicken sitting in a brine of maple syrup and a commercial rub i use on chicken. Rubs are also sitting in the fridge which Weber's rib rub. Plan is to smoke at 235 with apple chips, chicken will smoke until a IT of 180 and ribs will be a 3-2-1.
