Welcome to the site malcojester.
What to try, now that is a question that has many answers.
You should definitely give a fattie a try, a true favorite that is so versatile and delicious it would be a sin to not try one.
Another favorite around here is pastrami. Once you smoke your own you will never want to order it from the deli again.
A personal favorite of mine is smoked Italian beef.

ABTs are great also. Jalapenos stuffed with a cream cheese (or other ingredients) mixture and generally wrapped in bacon and of course smoked. Good stuff.
You can even smoke some eggs. Yes eggs, they pick up a nice light smoke flavor and can be used in any dish that hard boiled eggs are used in.
A personal favorite of mine are a for of armadillo eggs.
A pepper shooter (hot cherry pepper stuffed with proscuitto wrapped provolone and marinated in oil) wrapped in sausage and smoked up nice and tasty.

So many options there is always something new and delicious to try.
And we love to see some tasty Qview of smokes so have fun and take lots of pics
