Hello everyone, my name is Ben and I am pretty stoked about learning a ton from all of ya. I manage a major chain retail store, but was a butcher for  15 years prior to that.  I still process lots and lots of critters and about 200 whitetails a year in my shop.I have worked with the big rig smokehouses, everything automatic, but am now going to build a smoker based on a friends successful prototype. Can't wait to get started on it soon, will welcome any suggestions on what to do and what not to do with its conception.Thanks to everyone in advance, look forward to making some friends!! Great thing to do when bowhunting is closed....

Hey neighbor, welcome I'm just north in Winona. Great site here with tons of good info enjoy and good luck with the new smoker. Post some pics of the rig you build and the process people eat that stuff around here(myself included).
