Hi all, I just wanted to say hello and thank you in advance for all the help I will get from this forum. I'm 47 years old, a pretty good cook and I thought I would get into smoking. I brought and MES 40" 2 weeks ago and love it. A few years ago I would have gone old school but as I age I prefer connivence. Last weekend I made some succulent ribs (sorry no pic) and yesterday I smoked pastrami, for a poker game tonight.
I have 2 these (and they still need to be steamed) but it did not look like enough food so I'm making the Scarbelly wings. After seeing that recipe I knew I had to join.
