Hi, my name is Jim and I live in Clarcona, wideplace in the road outside of Orlando. I just received a smoker for my birthday. We did some ribs and they turned out ok, rub not great, working on that problem. Will do some more ribs tomorrow for the Superbowl, trying a couple of different rubs on those. I purchased some raw link sausage from Publix today and would like to smoke these. Any ideas they are already in casings. Not ready to tackle the sausage making yet, have to get my rlibs and brisket down first. Looking forward to some great smoking and reading this forum. Thanks for all of the help.

From one Jim to another welcome to SMF. Tyhe great thing about this passion is that even our mistakes are still pretty tasty. I'm sure some of the sausage experts will be along shortly to answer your questions.
 
Hi Jim, and welcome to the SMF. Congrats on the new smoker, remember that it only gets better.
 
Well I escaped from Orlando/Winter Park almost 9 years ago. Can't say I miss it in the lease. At anyrate a very good store bought rub is Durkee's Chicken and Rib Rub. If you feel like making your own, Google up MDM Rib Rub. Don't let the amount of sugar fool you, it is very good.
Don't over do your sausage, once that skin starts a good wrinkle, you are done.

First off welcome Jim to SMF. It sounds like you are well on your way to be an outstanding new member of this fine site. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
