Hey y'all, Steve here from Grand Saline TX. Very new to smoking meat. I bought an Oklahoma Joe Highland a few weeks ago and today will be my first time firing it up. I've made several suggested mods including the tuning plate, RTV sealant and gasket to keep leaks at bay, and the fire basket. I'm about to run to the local hardware store to see if they have an aluminum 90 degree pipe for the smoke stack. As for me I'm a husband, father of 2 (3 yr old boy, 8yr old girl (I have acquired a shotgun...lol)). In my spare time I play both electric and acoustic guitar. And it seems now I will also be spending time getting to know my new smoker!
 
So I'm gonna be doing some smoked chicken wings to start tomorrow. Taking it easy since I'm new at this smoking phenomenon. Found pork butt roast on sale though for $.99 lb so I'll be going for pulled pork this weekend!
