Newbie From Allentown, PA

    Hello everyone I am a new smoker to the forum from PA. I have a Brinkman Gourmet Vertical Charcoal smoker and I have used it twice and I am hooked. I am modifying it this weekend as per the threads on here. I look forward to smoking with it after it is modified even though I had good results with ribs with it as it is.

    Welcome aboard!! As the old saying goes, "If it ain't broke, don't fix it!!". If you're getting good results as is,  I'd go lightly on the mods. Try one at a time so you'll know what effect it causes. The most important mod on the little Brinkmann round smoker is to put a grate in the bottom of the coal pan, raised up an inch or so off the bottom. This will allow better airflow and get you a more consistent burn on your coals. At least this was my experience. Good luck and let us know how everything turns out!!

    I am actually just outside of Allentown but close enough to say I am from there. Big thing I don't like about my smoker is the temperature gauge and the inability to control the air flow so I am starting by adding a temp gauge with numbers and adding dampers.
