Hi, Hoping I can pick up some good advice from you good people on the forum. I have a Pro Excel 20 smoker and a Weber 57 kettle BBQ. Only used the smoker a few times with ribs, and they came out pretty good (well, I thought so and no one complained), but want to expand my repertoire into brisket, pulled pork and maybe fatties.
