Hey y'all I just got me a char broil off set smoker for Christmas. I love to grill and been doing it forever and I can tell y'all there is nothing better than BBQ'ing on bright sunny day or any day really. Now I have been turned on to smoking meat and can't wait to explore and experiment.

You've lucked into the right place. The search engine is plum full of step by step instructions with and without pictures of nearly any dang varmint you would or would not consider cooking. It is totally awesome. people here are friendly, knowledgeable, and courteous until you trash their cooking or their pit. If we can't smoke, we enjoy talking about smoking almost as much. AND the nice thing is everyone has their own opinion and we respect their right to be wrong. Smoking is about mastering your pit, which means making it the best tasting food your way. You can't be wrong, you can although make difficult choices to make work.

Grab a drink, pull up a chair, kick your feet up and enjoy your stay.

BTW we all love to see how you accomplish your cooking goals, its call Q-View. Take pictures cause looking is easier than explaining! Besides, you'll probably inspire someone else to want to try what you did.

Two suggestions, take notes at least to start. Until you master your pit, be a shame to hit the ball out the park and not remember what you did. Secondly when the world is crumbling around you and the fire is in the eaves of the house, "Patience" will always get you thru. "Patience"

a texas newbie???? words are confusing me??? thought brisket was tought in kindergarden there?? lol, you will love your char griller. check out some of the mods for them, kinda koo ideas for you once you get a feel for it. happy smoking
