Well, I thought I would post a new recipe I found - Smoked Mac and Cheese. Sounds funny, but it turned out great, if I do say so myself. That is the second thing that I have smoked since I got my WSM smoker. I will do a pork loin tomorrow and post the picture as well. New to smoking, but having an absolutely fantastic time learning.

 
The more bacon, the more better ! :-)  The recipe called for a full pound of bacon. I smoked it for 2 1/2 hours and the taste was outstanding (again, if I do say so myself). Can't wait for the pork loin tomorrow.
 
Mikebake , hello and welcome. I have a suggestion for you ; start and keep a "Log" of all your cooks , keeping tricks , hints , recipes , mistakes that you learned from , and so on...

This is a great tool for the beginning smoker.
