Hello - seems like a great forum for us guys out in the smokehouse while everyone salivates inside waiting for our labor of love. I don't think there are many NYers on Long Island that have a smokehouse and it helps to have some ideas easily accessible. I purchased a small Brinkmann smoker a few years ago and loved it but was too small and needed constant attention. About 2 years ago I built a 10'x8' smokehouse with a Brinkmann Trailmaster smoker. Been through many Pork shoulders, Briskets, Bacon and Lamb chops. Today we are trying a chicken and Pork Butt. No matter what I smoke I always throw som Lamb Chops on just with a little EVOO, S&P. about 45/55 min on each side - delicious. I look forward to giving and receiving help with my new found friends.
