I found this site from looking at a hunting pa site. I have done some smoking before but very little. I would like to get into it a bit more. my first smoker was is a brinkman grill and smoke. it must have been an old one though because there is no door on the front. did a few chunks of deer and beef in it. I wanted something that was a bit more easier to put more charcoal in so I went and bought a new brinkman grill and smoke with the door. got to looking around and seen there are some mods that need done to make it more efficient. being a machinist it makes it easy to do mods like this.

one quick question. anyone ever used pear to smoke with? I have a few pear trees in my back yard that I might cut down. I would hate to burn up wood that could be potentially good.

where are the 5 day free class's at? the prior attempts I needed to finish on the grill or it took a long time to get em even close to done. but it was all good. I would also like to attempt smoking some cheese also this year.

I have been on boards before. thanks for the write up however on how to post pictures and such. they are actually pretty good. many of the boards I go to do not make the effort to show how to post pics.

thanks for the warm welcome. not many boards welcome the same questions asked over and over again.

here is one of my roasts i did.

venison roast rubbed down with a dry rub then laid bacon on top and smoked for about 6 hours until done. man was it tasty
