Greetings out there in SMF Land!

I've got one post under my belt, not including this one, but I've been lurking for a few of weeks.  In the last few weeks, I haven't had as much time to read through the forums as I would have liked, but all in due time.  However, I have come up with a few inquiries over the weeks, and each time I've searched for the answers in the forums, I've found many, way-more-than-satisfactory, responses - even some worth a few giggles.

I live in Los Angeles, not too far from LAX.  I was born and raised here, as were my parents, and their parents.  I am of Chinese decent.  I work full-time in a print shop in Santa Monica.  I am a weekend-backyard-warrior.

I started my mediocre smoking hobby many years ago by using my old grill (an old CooksOn from BBQs Galore) and foil packets of chips or chunks.  I have since up'd the ante in the last 6 months, with a new Weber Genesis (NG) for my grillin' needs, a basic MES (4-shelf, but no glass front) for my smoking needs, and a new FoodSaver (since my old one died the day I had a fresh batch of salmon out of the smoker) for my packaging needs.  I love to cook and bake for my family and friends.  I'm happiest when I can share my homemade creations, and they actually taste good!

Sooo... my husband has been longing for the days of his youth, when his buddy and him could trot off and go fishing for the day, or even a few hours.  He's from Maryland, and is used to being able to fish in some of the brackish areas of the Chesapeake.  Lately, he's been watching fishing videos on youtube, trying to research the local freshwater fishing areas of the surrounding areas.  He's made several trips to a local 'park' that has a stocked, man-made 'lake'... only to be denied any kind of "catching".  I keep reminding him, it's called "fishing" for a reason.  Maybe he needs some new tackle...

He actually had a Saturday off work, so we planned a day trip to our -local- Bass Pro Shops.  Yes, a day trip.  The local store is almost 70 miles from our home - which translates into [with local traffic] a nearly 2-hour one-way trip.  He had plans to get some new lures and stuff, and maybe a simple setup for me, but I was more interested in the smoking supplies:  A stand for my smoker, pink salt in small packages, and even some casings.  I didn't come away with the stand, but I did get the pink salt, a small bag of hog casings, bags for my FoodSaver (the ones with the perf down the middle), a cover for the smoker, a couple bags of wood chips and a couple small containers of some rubs.  (I do like making my own, but thought I'd try some of these for their convenience.)  What a great place!

I think my husband and I were a little geeked-out by what a good time we had driving all that way to one store, despite all the traffic due to accidents and a whollota construction.  We even saw a huge tower of flames and black smoke coming from a residential area, as were heading back to the highway, on our way home.

Since the new smoker:  Ribeye Roast, King Salmon, True Cod, St. Louis Ribs, Chicken Wings, Pork Butt, Bulgolgi Meatballs, and Brisket.

In the near future:  More salmon and wings; homemade sausage.  Maybe jerky down the road.  Cold smoking.  Purchase of an A-Maze-N product or two.

*takes a breath and a bow*

(I think I'm impressed by the number of smilies available, too.)

I'll try not to lurk as much, and be more participatory.  I'm especially looking forward to sausage making, and trying my hand at cold smoking... cheese. (Kat, I was reading one of your cheese posts this weekend... and am truly inspired.)

I'm the little train... that will!

Howdy, Bloo!

It's nice to make your acquaintance. I cannot imagine a 70 mile trip taking 2 hours each way. Here in TX we've even got a freeway with an 80 MPH speed limit - and, of course - we take that as a suggestion and nothing more.

Again, welcome to SMF. Don't be a stranger.
