    Welcome to the forum!

First make sure your thermo is accurate with a boil test. It's gonna take a fair amount of fire to heat up a unit that size. The side burner might be enough. Experimentation will tell the tale. I put a side burner in my vertical which works great, but it is no where near as big as your unit.

Would it be possible to put a second hot plate in there?

  6. Yes you can use a hot plate on a thermostat and a hot plate that is on all the time. Works great. Or get a hot plate with higher output
