    Talk about a newb. I even posted in another thread instead of starting a new one....So I'll try this again...

    Hey all - Name ere is Theo.

    Stumbled across this site some time back and have been reading and looking at all those Q-Views. Needless to say I just HAD to purchase a smoker...actually it involved some finesse and explaining to the wife that this is a necessity in life...but here I am.

    Equipment: Smoke Hollow30166E <--Hey, had to start somewhere :)

    Location: NW Iowa <-- From what I have read...Yep I'm another one from this land of <Insert your own thoughts here>.

    On to my thoughts for this weekend...

    I have seasoned my smoker by doing a 2 'smokes' of just olive oil sprayed all over on the inside and 2 'smokes' of Mesquite only. Each one was about 2 hours in length. Needless to say I'm going to give it my all this weekend (even though it's supposed to snow and be cold) with a lil pulled pork, FS, beef ribs, maybe corn and maybe some ABT...Nothing like jumping in with both both feet, but then again I may chicken out and just try to take er easy on the first.

    I do want to post some picts up with it going....

    I'll tell ya what... I think you are starting out with the right stuff. Pulled pork, corn and ABTs are hard to mess up. As for the ribs, you might try the 3-2-1 method to improve your chances, but nothing wrong with just going for it either. That's the way I do it and I've had good results. Watch your temps and you'll be ok.

    Absoutly right. I planned to do the 3-2-1. forgot to put that bit of detail in OP.
  5. Welcome to SMF. If you're gonna start big, you chose some of the right starters for sure. Just don't go wild. Stuff costs money. And if it gets too out of hand, your wife will never let you buy anything, EVER.
