So I've been wanting a smoker for years. I love ribs and pulled pork and making them in a slow cooker just ain't cutting it. Decided I wanted an offset but didn't want to spend the $200 for a Chargriller. Saved a search on Craigslist for "smoker" and checked it daily after filtering thru the car ads (non smoker). Months go by then this beauty popped up. Called the guy and picked it up the following evening. He used it strictly for charcoal as the bottom is covered with ash. Guy's apartment was on the 9th floor facing the Hudson River with a killer view of Manhattan. Don't think the neighbors would have approved of him using it as a smoker.
So after Christmas I'm going to clean the ash out, build a firebasket, fire it up to see how to get the temps where I want them, then do some ribs to start. Figure I'll set a pan of water/apple juice on the elevating grate for my first try.
Mods I want to try are replace the firebox grill with a solid steel plate and maybe a perforated turning plate .
Looks like a fun forum, lots to read and learn.
