  1. hey guys... just picked up a Weber Smokey Mountain 18.5

    got it all built and ready to go just need some advice on some beginner recipes... any help?

    Welcome AeR0!  Congrats on the WSM, a great smoker BTW. 

    Beginner recipes?  Hmmmm, chicken is a good starting point, inexpensive and easy.  New WSMs tend to run a little hot (275F or so) until you figure out the temp control with the vents and you get a nice buildup to seal the leaks.  Chicken likes hot (up to 350F) as opposed to low n slow. Take them to an internal temp of 165F, eat and enjoy. 

    Pork butts and shoulders are very forgiving and you can smoke them anywhere between 225F and 325F, especially if you wrap them with a little liquid when they stall about 3-4 hours into the smoke.  I usually start them at 225F and just let the chamber temp slowly climb into the 275F range.  Take the butt to an internal temp of 205F, let it rest an hour, then pull apart, add sauce or finishing sauce.

    Welcome, glad ya joined us ! I have a WSM 18.5 also & it's a great smoker..... You will really enjoy it ! Looks like Ray give ya some good info there !
