Hi everybody!  My name is Thom and I live in Pflugerville, Texas (suburb of Austin).  I have absolutely ZERO history of smoking anything, been a bbq'er my entire life.  I have a good friend who smokes regularly with a Masterbuilt electric unit so I picked one up from Sams today.  Got her fired up right now doing the pre burn-in procedure, with some dry-rubbed babybacks and spareribs in the fridge waiting on the burn-in to complete.  I plan on following the 3-2-1 cooking procedure.

Welcome to the SMF Family...The Spare Ribs and Baby Backs cook at slightly different rates...Put the Spares in then 1 hour later add the BB and complete the Smoke as prescribed by 3-2-1, they will be done together...JJ

X2 Start with 2-2-1 with the baby backs and 3-2-1 on the spares.  After that you can modify the method to your preference.

More importantly, welcome aboard, Thom!

Good luck and good smoking.

Roger that fellas!  I'll pull those baby's early and foil them up.  I didn't check back in soon enough on these replies and started them all together.  Not a problem really, we'll just be eating bbr's as an appetizer!

First off welcome to SMF there Thom. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
