newb brisket ?s Mishigan

Been hanging around the site for a bit doing mostly pork stuff and been wanting to try brisket. Here in MI it seems to be expensive compared to other areas so have not messed with it yet.
first off what does "11lb Angus Deckle Off Choice 120 Raw Boneless" mean? I can get this at around $2/lb I know the 11lb part, lol.
Also anyone in SE MI, where and at what price are you getting brisket? The local grocery has it at over $4/lb
Also I know everyone has their opinion, but what is a good wood to start with for beef? (gas smoker, so wood chips actually)

Where you at in Mi?
Deckle off means its just a flat, no point. The rest is not important.
I can get full packers (point attached) for $1.79/lb if your ever in the need.
2 bucks for a flat isin't bad unless it's trimmed of all the fat, then don't bother.
Mesquite is my fav on brisket but anything will work.

That would be a flat.

Deckle & Point are the same thing, so deckle off is the whole brisket minus the deckle which leaves you with the flat.

IMPS = Institutional Meat Purchase Specifications and IMPS 120 just happens to be the code for a brisket.

If I get one I hope to get to it this weekend, got mesquite so that is a go.
Will q-view for sure, got that figured out smoke.

bbq bubba, I plan to post another thread soon asking about any MI bbq events, I am very new to real bbq (was in TX over a year ago and tried it for the first time) and want to go to some events to taste as much as possible and learn.

This site is a great place to find answers that is for sure.

I'm in Michigan and I just bite the bullet and pay ~$4/lb at Ray's Prime Foods.

But BBQ Bubba's offer is mighty tempting!

And personally, I smoke them with Apple and Hickory wood. No right or wrong answer there.

Go to Wally World and get a brisket. $1.86/lb. I get them there all the time. Good heavy Briskies. Cryo packed and ideal for long slow cooking.
No, Wally World near, a road trip is in order. No use paying outrageous prices for a tough piece of meat whether it is choice or whatever, it will taste as good when the rendering is done anyhow!!
 
We just got our very own wally world it is in Saline, about 15 mins away, but that will work.
Started another thread about what cut I actually bought, wasnt sure after I got something different than I originally thought. The guy that got it for me always gets me top quality meat/seafood so I am thinking it will be just fine. Need some input on burnt ends I will post on the other thread and start Q view either in a few hours or first thing in the morning.
