Well since i didn't get to do a xmas smoke i did a pork loin today..i started out with a full pork loin and cut a chunk off for the wife and the 'kraut. and then i cut the rest in half, i filleted the one and added a layer of some pepper seasoned sausage and then dusted with some lysanders rub and rolled it up and trussed it then added some more rub the covered in bacon. the second piece i just dusted and did a bacon weave on it



I had some bacon left over so i made some pig candy..i dusted the slices then rolled them up and stabbed with a toothpick then covered in brown sugar..they didn't make it for pics and they were awsome..





and here is what was left of the one the other went home with the inlaws



i feel guilty for not being on here much any more but things are real busy around here.. been working some OT and have been on 3 storm calls in the last 5 weeks so it's been very busy..but i want to wish everyone here at SMF a very Happy New Year
