New Year's ribs

    Early morning and getting ready to put on some baby backs and my wife picked up some pork loin "chops" that I'll put on later as well. Starting early so we can have some lunch while we watch the Gator game today. ☺

    On the smoke and looking forward to lunch.

    Some ham hocks in the pot, gonna do some homemade collards as well.

    3 hours in and just put the loin chops on, never tried these on the smoker so we'll see. Ribs were already at 150/155 so i put them in foil for I'm guessing another hour? Still kinda new at doing the ribs.

    Looking good. I do the 3-2-1 method for ribs. 3 hours smoke, 2 hours wrapped in foil with some juice, 1 hour unwrapped basting with sauce.

    Thanks Jayace. I put in some butter when I foiled them. I'll baste one rack with sauce for the last hour and skip the other, my wife likes hers with sauce on the side :)

    The loin chops are done. Sat them overnight in EEVO and a sweet basil rub. They took about an hour plus, and they came out very juicy.

    Be careful - The 3-2-1 method is for spare ribs. You want to be closer to 2-2-1 for baby backs.

    Lunch is done. Unfortunately the lighting in my kitchen sucks so sometimes the photos aren't that good. Smoked them 3-2-30 mins and they came out really tender and just came away from the bone cleanly. My wife was skeptical about getting a smoker but she is now a total convert. 😁

    Nice job JetsKnicks - ribs look good. I'm with your wife, sauce on the side please. In fact, most of the time I don't even use sauce on my ribs.

    Thanks Bryce. I like a little sauce on them for the last hour but i emphasize the word little lol. Some folks think its not a rib if its not served with sauce dripping off it but i want to be able to taste the meat.
