Gotta ring in the New Year right! Did this 7.5#er yesterday in my MES 30. Rubbed with my own rub, smoked with maple and hickory. Cooked for about 11 hours at 235 to an IT of 202. at 170, foiled in pan with some apple juice and honey. So tender and scrumptious! Doing some ribs today. Butts Up & Happy New Year!

Looks like it came out great - how do you like the bear paws ?
 
Thanks! I love the bear paws. They are pretty amazing. Make things so much easier, and with better results imo.
