I recently built a UDS for a friend of mine who does a little local hunting. He brought me a Wild Boar Piglet that weighted approx. 20 lbs. a few weeks ago. What better way to bring in the New Year than to smoke a piglet..... It was TOUGH getting up at 6:30 am to start the UDS But up I got and started it up and prepped the piglet.

I just sprinkled Rib Rub on it without anything else. Basics work well....

Threw it on the Smoker at around 7:20 am and went back to bed.

2 hours later the smoker was cranking at 300*:icon_redface: I adjusted it down a bit and kept it at 250* until it has been on about 9-1/2 hours.

I noticed the meat temp drop a couple times a couple degrees and wonder if my Maverick is acting up :confused:

It came out just fine and I took all the meat off the bones and well, it came out spectacular...

Now your pig looks awesome and I know it tasted good to. Now we are about to butcher our pig that has been growing for about 7-8 months now.
