New Years Day 2016 Baby backs

    I have 3 racks of BBR I have dry rubbed 48 hrs earlier and sat them in the fridge.

    Plan is to put in the smoker for 5 hrs at 220F, I will start mopping at 4 hrs, I am not planning on spraying or misting and I am not foiling.

    Do any of you have opinions or see any mistakes, I may be making?

    Any thoughts or input would be appreciated.

    Pics will be posted as we go.

    Start checking for doneness around hour four. Pick up the rack with tongs, about a third of the way in. If the rack bends 90 or almost 90 degrees you are done.

    4 hours in and starting to mop looking to take off the heat and rest in 30-35 mins

    Great tip, I think I have a good smoke racks bent perfectly, one started separating so I am excited to try.

    End result was good, temp was 210-230 all cook
