I have been offset smoking with charcoal for years. Being a Texan, I understand that real barbecue means brisket.  I also smoke turkeys, ribs and pork loin. I would like to try my hand at cold smoking as well.

I don't often have the time to dedicate a full day to fire-tending, so I am looking for an electric set-and-forget system.  That's how I discovered this site. There is a lot of awesome info here.

I was planning to build my own electric setup, but the Masterbuilt (with a mailbox mod) may do everything I need for less than I would spend on a build.

Anyway, congratulations to you guys on creating a great online community here. It is a great resource.
 
Hello and welcome to the site, I am a charcoal and stick burner, but I know a guy who is very knowledgeable when it comes to electric smokers and a really good guy, (Bearcarver)  give him a shout or a PM.

My MES 40" is arriving today, as is my AMNPS. I plan to start out with an easy smoke - probably some prk tenderloins - just to get familiar with the equipment. But I have big plans after that.

I ended up going with the 40" Masterbuilt.  I got a scratch and dent special from Amazon dirt cheap. I just seasoned it this afternoon.  I plan on christening it this weekend.
