I do fat cap down. I like the bark better that way. I used to do cap up but prefer the cap down now.

This was also the first time I tired this in an alum. pan with a shallow rack. It worked better than I anticipated and kept things very moist. Made it really easy to foil as well.
 
instead of a blender, maybe try a thunderstick..........and YES, thats duck tape wrapped around it. Red/Green would be PROUD
