Hey guys(and gals),

New to you from Stonewall, Louisiana. I am a novice smoker and griller, but have crazy expectations of my future. I have read a few posts and I am extremely pleased at the friendly and informative responses. Like I said, I am a novice and will likely need some advice in the future and reading the posts has convinced me: 1) This is a friendly environment, and 2) I can get some great advice here.

As I say this at 5:15 a.m., my brisket has been on for a little over an hour. My hopes and dreams are on this one. I don't know how my life will turn out if it is a failure.... Oh wait, it's meat. I hope it's good, and I would love to share the results with everyone (good or bad). This is only my second brisket on a smoker, and my first was not bad enough to discourage me from the second. In fact, it was pretty good. That was my wife's take on it, and she is pretty picky when food is the subject. In Louisiana, there are three things that are a part of every day; good food, family, and friends. My boys will grow up with the best of each hopefully. I appreciate the chance to learn and look forward to making new smoking friends....
