Hi my names mike,
I am new to the whole smoking process. My father and I had a smoker built for his retirement. It is a 500 gallon drum smoker on its side on a small boat trailer with a side firebox with two four inch smoke stacks. I have tried to cook a few things on there using oak wood but everything is just to ash/over bearing smoke tasting. I haven't tried to many things yet I am looking for advice on how to run my smoker and possible a recipe that someone can recommend for beginners. Thanks for your time -mike-
