My husband and I have been smoking for years with several kinds of smokers. We currently have an up right Charbroil propane smoker. Recently we are having problems. We have smoked two beer butt chickens and a pork loin roast. We used a different rub on each and when we went to mop for the first time they were all soot black color and the rub had a very bad taste to it. We clean our smoker after every use and are very frustrated at wasting so much food! Can anyone help with suggestions?
