If you do... you need to wrap it in foil with some liquid... apple juice.. cherry juice.... beer.... what ever and put it in the oven on 275 to finish it up to 200 or so. Well my first smoke went great, I had to slice the brisket thin to get it really tender. It wasn't super jucie but it wasn't dry by any means. My sauage and atbs were perfect! I kinda burnt the ribs but with the meat falling off the bone , it was great. Thanks for the help!
