New to the Site. Great format! I'm a retired Firefighter hailing from Milwaukee, WI. Got hooked on smoking when I joined the fire department (get it?). I started smoking meat about 10 years ago after attending the American Royal as a spectator. My first smoker was a cheap offset. Then I progressed to an electric upright smoker. After that I built a UDS smoker which I really enjoyed. After going in a local competition I saw some of the people using a pellet smoker and thought I'd give it a try. I bought a Traeger and use it mainly for home cooking. I will stick with the ugly drum smoker for competitive cooking. Cooking with a smoker is very satisfying and compliments beer drinking during the summer. Favorite yet least experienced meat to smoke? Brisket. Best known for ribs.
