Hey all, I am new to the site and new to smoking. So new that my Stainless Steel 48" Weston vertical propane smoker hasnt even arrived yet.
So my question is, if you all had to start over, knowing what you know now, what you adivse me to do as a new smoker?

First of all, Welcome to SMF!!! The amount of knowledge from the people here is absolutly wonderful! There are truly some great people here.

Sounds like you have a wonderful start with a great smoker. I have only been doing this for about 2 years now and my biggest advice to you is NOT to over smoke your food and to always make sure you have the thin blue smoke.

Besides that, this is one big experiment. And once you find the piece of meat that comes naturally to you, you will make that your pride and joy!

Welcome to SMF - you'll learn as you go. The great thing about this site is that you won't only learn from your mistakes, you'll get to learn from others and there are plenty of great folks who can answer your questions. It's all trial and error and great food along the way.
 
Welcome to the SMF!! Depending on the direction you want to take your smoking skills.....become a judge, take a good bbq cooking class, and practice, practice practice. And it's fun!!
 
Roy, Welcome to the SMF family. I moved your thread here to Roll Call so your post gets more veiws and folks can welcome you proper like.

Lots of good advice has been given here so the only thing I can add is to be patient. Good que takes time to master and the other thing , there is no timetable for queing. Guidelines there are a plenty, que is done when it's done and adding heat to the process doesn't really speed things up.

So roll your sleeves up, read the forum and when that smoker gets to your door, practice, practice, practice!

My advice is to try anything you think may be worth trying and do it often. It's all good mostly and you'll have fun learning and revising as you go on with even more. Welcome to SMF! It's a blast!
 
Hey Roy, Welcome to the addiction. You will find lots of advice and friendly folks here who are willing to help guide you in your quest to learn the art of BBQ but in the end, all they and the SMF can do is help guide you. In the end, it is a matter of jumping in and just doing it. I have smoked fish for years and have perfected the prctice pretty well but have made my fare share of mistakes along the way and recently decided to try my hand at other forms of protein. I have tried to come up with ideas for almost every meal since purchasing my smoker and trust me....when you tell your wife you have no idea how to cook spagetti in the smoker... it will dawn on those around you that you are addicted. So jump in and enjoy the process. Some dishes may turn out better than others but that is all part of the learning proccess and so far I have only seen clean plates returning to the kitchen.

A good place to start is Jeff's 5 day e-course on the main forum's page. It will give you a good basic knowledge base to start from.

Other than that, don't forget to season your smoker to remove any lingering chemicals and prepare it for your first round of applause from family and friends. Then, jump right in and join the growing number of folks who call the SMF home.
