Hi folks;
My name is Duane and I'm from east central Minnesota. I started smoking meats about 15 years ago when my neighbor as well as my mentor sold me his homemade smoker because he was building a new one. His dad owned a meat market for as long as he can remember and figures he started cutting deer by the age of ten. His Christmas presents from his dad were even wrapped in freezer paper. That being said, I got off to a good start learning the ins and outs but by no means have all the answers. I smoked thousands of pounds of various things through that smoker and have recently decided to build myself a new one. A local bar owner gave me a side by side Hobart freezer/cooler that measures about 54"x31"x70" on the wheels. I had some doubts on building it properly and that's how I discovered this website. I spent many hours just reading posts and realized that there is a wealth of information here and that I need to be part of it. Thanks for having me
