Hello Everyone!

My name is Mike and My wife and kids decided to pull a big surprise on me and got me a Masterbuilt 40" propane smoker!

1300 inches of smoking room, Im excited!  I have been using a smoke box inside my gas BBQ grill for a year now, and the results have been awesome!  Last week I bought a small 2lb brisket and a bunch of other meats, this was before I got my gift!

so yesterday i seasoned the smoker!  today as of half an hour ago, I started my brisket and 2 potatoes!

its holding steady at about 210 degrees right now, im going to let it run for about 2 hours at this temp uncovered, then Ill wrap it in foil, same with the potatos, after coating them with some melted garlic butter, wrap em and keep going until the meats inside temps hits 190-200.

Woot woot. Sounds delicious! I tried smoked pork ribs for the first time yesterday, and I feel your joy. Great gift. I only bought my dad a car wash coupon for his bday.
 
The food was very tastey, had a beautiful 3/8" red ring next to a 1/4" smoke ring...  unfortunately, the meat was 90% fat, and very hard to chew, the good parts were tender, melt in my mouth good... and the potatoes were delicious!

i know now i need to pay attention to either my marinades more to break down the fat more, or the cut of the meat....

either way, got a pork steak calling me in the fridge, might have to do that next weekend!
