Hello everyone! My name is David and I am new to smoking as my question will show.I was gifted a Masterbuilt 30 Electric Smoker and will give it a whirl tomorrow,my question is when do I add the soaked chips to the firebox when the unit is started or when it reaches temp. a little confused
 
I don't have any experience with the MES but lots of people on here do so they can answer that questions specifically. But on my smokers I put the chips on right away when I am bringing my smoker up to temp. There is a big controversy over soaking the chips or not soaking the chips. Some do and some done. There is not right or wrong way of doing it. As with all of this smoking stuff the best way to learn is to experiment. Just because one person does something one way doesn't mean you have to do it that way. Experiment and see what YOU like and then do it that way. You will get lots of great tips and idea's on here but in the end you are smoking for yourself so what ever you like the best is the correct way to do it. One thing to keep in mind when smoking is you don't want to have too much smoke. If you have thick white billering smoke coming out of your smoker that is bad. Your meat will taste like a burnt stick. You want thin blue smoke. Some times you won't even see the smoke coming out of the smoker. If you can smell smoke you are going to have a nice smoke flavor. Take the free 5 day class on line here and you will learn a ton. And secondly if you have questions ask them. 1st of all ,Welcome to the site!.

 2nd ,Don't soak the chips!!!

 Add them after you have preheated the unit and right b4 you add the meat.
 
Welcome to the forum it's a great place and the people here are very helpful.  I use a Masterbuilt 30 inch Electric and I do not soak the chips and I put them in after I pre-heat . I put mine in and get the smoke going then put the meat on.  Good luck and keep the Smoke rolling.
 
I have an electric, the manufacturer recommends NOT soaking, so I don't, the taste has all been great.  I DO soak if I am using my grill, not my smoker, and grilling at higher heat; the chips don't burn out too quickly, so I get a longer smolder/smoke time.  If you don't have all the instructions for your gifted smoker, they're usually easy to find at the manuf. website, and there are LOTS of MES fans here, so I'm sure you'll get lots of good advice and support. Welcome aboard,i also have an mes 30.I love it for small smokes,very easy to use.I would invest in an external thermometer to use as the original equipment tends to off a few degrees.I add dry chips as i am loading the smoker,after the pre-heat.
 
Welcome aboard. Glad to have you here. I tend to agree with most of the folks here that do not soak chips but if YOU like the results better then do what is best for you. This place has great ideas but you have to take what is here and make it yours.

First off Welcome David to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
