  1. Name is scott from iowa. Just got a offset wood smoker. All new to me but very excited! Wanting to smoke chicken quarters, and thick cut chops next sunday. Any advice?

    Hi Scott! Fellow Iowan here! I also just got an offset smoker for father's day/anniversary gift.

    First thing to do would be seasoning it. Good luck with your new smoker.

  4. Glad to have a join. In Northern Illinois here. Make sure to read the manual on the new smoker and yes season it first. If you have issues with it this is a great place to get help. Either use the search bar or here and someone or many people will point you on the right track to help you. Good luck and keep smoking.

  5. Hey Scott, hello and welcome from East Texas, Chick is pretty easy good starter. I usually brine my chicken 6 or more hours before grilling or smoking. There are a ton of recipes I just go simple, Salt pepper and sugar mix well until dissolved in the water then in goes the chicken. You can experiment with wood flavors see what you like. I use mostly hickory, pecan and oak also like peach and cherry.
