Hi. I just signed up. Found the forum because I am currently in stall with a 4 lb. chuck roast in my smoker and I freaked out. Ran straight to the computer, Googled smoking chuck roast and found this forum. Thanks for calming me down. I have been at 162 for 3 hours then it dropped to 159 for the last hour and I lost all self control. I'm new to smoking meat....only smoked a pork butt, top round roast and ribs so far. Still learning...I have a lot to learn. Thanks again!!!

What type of smoker you using? Have feeling your temp gauge is off because that's an awful long smoke for a 4 lb chuck. And you're not even finished yet. 225 or not.

Masterbuilt pro gas. Says duel fuel but I'm not good enough yet to know how or why I would use that.  The chuck is a disaster. 14 hours and it's still at 169....I think the gauge on the smoker is screwed. I read that you cant trust the gauges that come with the smoker....seems kinda dumb to put a temp gauge that isnt accurate on a smoker. I also got a so called wireless probe for the meat. It has a timer on it that reads in minutes and seconds. How often do we smoke meat in minutes? Like I said...got a lot to learn.
