My name is Aaron and I'm somewhat new to the BBQ scene. I grew up in Maine and now live in Massachusetts. I've worked in many kitchens starting in a small deli/kitchen in Maine. The cook there really inspired me to get into the culinary field and since then I've been in love with cooking and making people fat!
When I moved to Mass, one of my girlfriends friends was big into BBQ and smoking meats. We had decided to both start going to culinary school, unfortunately a week before we had to sign up for classes he lost his battle with a drug addiction and passed away. I still went to the program which was a year long and got a certification in culinary as well as my serv-safe.
I've been wanting to open a business of my own and I've been toying around with just about every idea you could think of. Deli, cafe, restaurant, bed and breakfast, and I've finally settled on BBQ thinking of my friend and it's what he would of loved to do. I admire the time and love that goes into the food, and the pride that comes with making an awesome meal and seeing people so happy.
Currently I work at a catering place as well as a Chilis. I know Chilis sucks, trust me I hate it too. Everyone says that I make the best ribs there. When they come out of them smoker they get devoured! The catering place I work at does some smoking and grilling, a lot of great marinades, rubs, sauces, and flavored oils. I smoked 2 beef briskets at chilis last year, they were nice enough to let me use it for the day when I was throwing a bbq and they came out awesome. This year for Christmas my girlfriend bought me a Masterbuilt XL gas smoker which I am currently putting together and can't wait to start using! This year is going to be a year of great food as I am going to be doing a lot of smoking, making sauces rubs and marinades and trying to get my recipes and techniques down. I just got 4 books on bbq and smoking and I've been cramming so much knowledge. This looks like a great forum, so I'm really excited to talk to some people about BBQ as well as share my achievements throughout the season.
