New to the forum but not to the lifestyle!

  1. My name is Dana. Born and raised in Houston, Texas. Klose BBQ Pits has been my home for the last 8 years and I have learned so much and made so many friends around the world it is a little surreal. David is my brother, 20 years my elder, and working with him is a ______. I am not sure what that word would be right now and it is safe to say it changes daily. I have a college student graduating from Culinary School this year and it doesn't seem possible that I am old enough for that.

    So, to say that we cook a lot would be an understatement, at work, at home, maybe even in my sleep. I started cooking around age 5 with the help of my grandmother and have been taught by some of the greats throughout my life such as Paul Kirk, Lola & James Rice, Texas Rib Rangers, Guy Fieri, and many others. Spending the day with Anthony Bourdain, Steven Reichlan, Myron Mixon and Michael Symon is on my bucket list but not necessarily in that order. I would love to be a guest on "The Chew" just for a day. I love to see the hosts interact with one another, funny stuff! I digress, but that tells you a little about me!

    First off welcome to SMF there Dana. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

  13. Awesome! Then, we have probably met. I sit right in front! Can't wait to hear some stories and get some new recipes. I love this message board. A lot easier to follow and navigate than some others I've been on.

    Let's get this party started. Anyone have a recipe for a killer pig candy? And has anyone tried chocolate dipped bacon? It is great! I want to know some of the great stuff you make and have had good response to at events or family dinners. Lately, we have been experimenting on my friends with different things. I have to keep it very mild because of serious esophogeal condition but I do jazz it up for my guests if they want.

    Some of the main ones I like to make are.....

    bacon wrapped chicken (you can also wrap seafood or veggies/peppers inside)

    stuffed fatties (stuff it with cheese/peppers/again whatever you like, you can even wrap in a large tortilla and cut in serving sizes for finger foods)

    smoked salmon with a maple bacon drizzle (tons of flavor but not as much fat)

    serve that over smoked asparagus,or a bed of grilled veggies.

    I however like it with a twist, after smoking the asparagus long enough to get the flavor, tempura batter and flash fry for a really light crispy smokey treat! 

    chocolate dipped bacon (topped with assorted things)

    I'd love some more ideas....but I have to go, I am now starving! LOL!
