Hello all, I'm John. I finally got a smoker (MES) about a month ago. I've wanted one for a long time but finally bought one. Best thing I've done in a while. Thanks to the advice on this forum I've made some delicious meals. 

A little about me. I was stationed (Army) in San Antonio and El Paso and had the pleasure of eating some great smoked food. I also took a job in Lubbock (where everything was smoked), and I've been dying to recreate that flavor/taste. I've had, so far, mostly successes to this point thanks to the advice from you guys (my one failure was from a youtube video, although I'm sure it was due to operator error). 

I've made ribs, chicken breasts, flat iron steaks, and pork tenderloin that have been amazingly good thanks to the info you all share.

I can't post pics as I have an old school cell ( my daughter insists I get a smart phone)... 

My mom and dad are coming down from Ohio tomorrow ( I live in Virginia) for a surgery I'm having on the 8th, so I'm smoking 3 chicken breasts, a pork tenderloin, and a flat iron steak. I can't eat for 8 days after tomorrow so I'm gonna go all out.

When I can eat again I'll try pulled pork and a brisket ( I never even heard of brisket before I was stationed in Texas).

Congratulations on your new MES. It sounds like you've already had a whirl with it. Please be sure to get a smart phone so that you can post pictures and recipes of your smokes. Glad to have you here.

My grandfather owns Mitchell bail bonds in east San Antonio. Though I've been a few times, I've never had barbeque in San Antonio. Good luck on the surgery and quick recovery! Let's get this man eatin!
