New to Smoking

  1. Hi everyone my name is Andy i live in england.I have been to florida many times to fish the keys and watch drag racing .i love the lifestyle you have herein the usa.

    I have been into grilling and outdoor cooking for a long time.I have managed to find on ebay over here a New braunfels black diamond which i picked up last week.So far i have done ribs,chicken.lamb shoulder on it .all of them have came out great using oak and cherry.I have read that some people fit a sort of heat deflector in to the smoke box to get a more even temp i have noticed i get about 75 deg difference from one end to the other.I was wondering if any one could show a picture or diagram of what one should look like many thanks .

    First off welcome Andy to SMF. I'm in north Florida so you probably went to the drag races in Gainesville which is about 2 hours south of us. I also had an employee that used to race the 1/4 mile in Gainesville. You'll like it here at SMF for there are alot of good folks that would just love to help you with just about anything to do with smoking. Now you will also find some really good recipes and some new methods of doing things on all types of grills an smokers. There are a few of your fellow European smokers that are members here to.

     If you use the search feature and type in horizontal offset smoker mods . hit search and look for a post with that title by DDAVE it has all the info w/ pics for the mods you need for your smoker.
