New to smoking!

Hi. My name is Jodi and I live in central Illinois. I am new to smoking but not to eating smoked foods! I just asked about converting a little chief smoker to charcoal. I had bought salmon and planned to do a light smoke before canning it all and then found my smoker was not working. I have canned meats and veggies and of course fruits for close to 40 years. I think smoking meats will round out my cooking regimen. Seems like the only thing left would be a turkey fryer and I don't want to go there :) I look forwards to learning. Oh, I have an Excalibur dehydrator that I use often too. I make lots of jerky from whole eye of rounds that way. I wondered if smoking would add something there too.
 
Welcome from SC, Jodi. It's really good to have you on this great site. It sounds like you have an excellent background. You won't need a turkey fryer. Once you've smoked a turkey, a fryer will be the farthest thing from your mind.
