Hello. I have been reading bits and peices of the forum for some time now. I just finished smoking some chicken (first thing i ever smoked) and it turned out great. My next adventure will be on Monday with a boston butt. I cant wait...:grilling_smilie:

Welcome aboard! Pork is great to smoke especially for beginners as it is very forgiving. I think you will enjoy it as well add the forum. Look forward to seeing some Q Vue!

Yeah I'm still a beginner to I've been smoking about 6 months. Pork butt is my favorite to smoke I always have a couple butts and they are great to grind up and make sausage to. Yummm!

Howdee Howdee SL, it's a pleasure to meet you. If you have any questions there is always a huge amount of help to be had here. When not cooking we love talking about cooking. But remember that no two smokers cook the same. With smoking there are endless way to arrive at the same point. Its really about learning your pit, and how to make it work to do things your way. Its a load of fun and you get a lot of good food while learning.

Speaking of learning, I highly suggest you find a journal, index card set, a note book, or something you can keep notes in. I know it sounds stupid, but you are going to learn much with your cooks and you wouldn't want to forget some small thing that made the last smoke perfect.

My first ever Canadian Bacon using my own recipe was out frickin standing its a shame I didn't write down what I put into the brine/cure........

Again Welcome and I look forward to seeing your achievements

Thanks again to everyones kind words. I am super excited to try new recipes along with tips and tricks to make my sessions better. I have been keeping info on my phone so i dont forget, but i think a note pad would work better as stated by foamheart.
