I received a gas smoker for Christmas and am very excited to get started. One thing I have a question about is outside temperatures.  I live in central Iowa and the temperatures right now are in the mid 40's.  Do I need to make any adjustments to the length of time I smoke my roasts?  Appetizers?  Ect....

Hey Freddywonder, welcome to the forum!  This is a great place to learn about smoking.  There are a ton of folks with A LOT of knowledge that will help you out in a flash!

As for your question about ambient temps and smoking times... it all depends... if you can hold your smoker at the 220 - 240 degree range in your given ambient temps, then no... you're good to go.  If you can't then you're smoking will take a bit longer....One thing I'll say and others will add to I'm sure is this:  the thing about smoking is it's done when it's done.... it's truly not like cooking in an oven...you can expect temperature swings in your smoker.  There will be days when you can't keep it cool enough.. there will be days when you're fighting to keep it above 220... even the sun hitting it can impact the temps...we've all been there and we'll all be there again... it's part of getting your 'game' on... you'll learn to deal with it and adjust...and this is the best place on the planet to learn.  As suggested above, take the 5 day eCourse...

Another thing I'll add is probably one of the best investments you can make to add to your smoking pleasure is a good digital remote thermometer - or 2 or 3 of them.  A lot of us run multiples.    One for monitoring the temperature inside the smoker and the others actually stuck in the product being smoked...really gives you a great idea what's going on inside your box.  Maverick makes a multi-probe unit so you get two monitoring probes in one device.

Welcome, what smoker did you get? Will you be smoking exposed to the weather? I smoke all year long but my equpment is on a covered 1/2 open patio. I cold weather when I smoke a Brisket. I will start it 8:00 PM to 10: PM and let it go all night, when the I. T. hits where I want it 180 to 200 it may have taken 12 to 17 hrs with the rig pushing 225 to 250 steady using propane.Ambient 20 to 30. good luck and good smoking
 
Welcome to the site. My gas smoker just sits outside (NW Ohio) I don't have much trouble holding the temp at 220 to 250 in the winter. One of the biggest trouble makers will be the wind! You need to be able to block it some how and that will make a big difference on your temp.

It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
